Lemon Shortbread
My son Karl and I baked and tested these a few evenings ago. Warning! These make a large pan and you will be in
d anger of wanting to eat the whole pan immediately. I made Karl take some to his girlfriend and I took some toour neighbor to save myself from total gluttony. They’re perfect with a hot drink, a cold drink or no drink. But please be civilized and put them on a plate instead of standing over the pan like we did.
If you dare,
Cream 2 cups butter with 1 cup sugar, 4 teaspoons freshly grated lemon peel and ¼ cup lemon juice until creamy. Add 4 ½ cups flour and beat until mixture resembles coarse crumbs.
Pat into a lightly greased 15x10x1 jelly roll pan. Bake for 30-35 minutes in a 350° oven until light golden brown. Cool completely.
Glaze with 1 cup powdered sugar mixed with 2 tablespoons butter and 2 tablespoons lemon juice. Let sit for at least 30 minutes and cut into squares or rectangles.
